We are a boutique artisan company in the heart of The Blue Mountains specialising in therapeutic herbal teas, dehydrated crispbreads, and traditionally fermented kombucha beverages. ACTIVATED AND RAW

All the seeds and nuts we use in our crispbreads have been soaked/activated before each recipe is made (they begin to germinate/sprout), then the crispbreads are dehydrated (raw) to maximise taste and nutrition.

HEALTH BENEFITS OF KOMBUCHA

Kombucha is a lightly effervescent fermented tea drink, traditionally brewed with green tea and sugar together with a living culture or 'SCOBY' (Symbiotic Colony Of Bacteria and Yeast). The value of fermentation (like yoghurt, sauerkraut, kimchi, etc) is in naturally occurring live enzymes and probiotics that can improve digestive health and restore balance to the body. It can be consumed regularly as part of a healthy diet and is a strong alternative beverage of choice to soft drinks, energy drinks, and juices. Our kombucha is 100% natural and unfiltered with nothing added after fermentation (no artificial colours, flavours, or preservatives). We use organic raw cane sugar (unrefined) and only in minimal amounts as a food source for fermentation. And our flavours are not from powders, essences, concentrates, or pre-bottled/processed juices. They are juiced by us in our brewery, along with whole flower herbs, creating a real fruit ferment.

ALCOHOL CONTENT OF KOMBUCHA

Kombucha is not an alcoholic ferment, however due to natural fermentation there is a small amount of alcohol (0.5%). It is not recommended if pregnant or nursing.

KEEPING KOMBUCHA

Kombucha is best kept refrigerated. We aim to bottle each batch to capture best level of fermentation to taste, so refrigerating it when you receive it will preserve this. Being naturally carbonated due to fermentation, if you leave it out of the fridge and depending how warm the ambient temperature is, you should expect it will become more effervescent and vinegary/sour to taste.
