Kombucha FAQ

What is Kombucha?

Kombucha is a cultured probiotic tea. Sweetened tea fermented with a living mother SCOBY (symbiotic culture of bacteria & yeast) for a length if time to achieve a slightly dry & sour probiotic elixir beverage.

Additional ingredients such as herbs, fruits or spices can be fermented with the tea to create added taste and nutrition.

Why is Herbs of Life Kombucha Unique?

* Our Kombucha is a raw living food, gluten free, vegan and 100% organic. Each bottle of Herbs of Life kombucha is able to grow a SCOBY culture.

* We are fastidious in our choice of suppliers and ingredients. We brew with spring water from the Blue Mountains, and vow never to use treated town tap water that contains poisoning chemicals such as chlorine, chloramine, and fluoride.

* We do not add or use essences, flavourings, extracts, or concentrates in any kombucha we produce. The fruits, spices, and vegetables in our Kombucha are all organic and freshly juiced in our brewery from fresh produce sourced directly from local organic farms.

* Our unique brew is a real fruit fermentation process. This means that the freshly juiced ingredients are fermented together with the tea and mother culture. This method achieves the most optimal flavour and nutrition because:

  1. The fermentation of the fresh ingredients increases flavour and nutritional potency.

  2. There is an overall heightened heath and wellbeing experience during drinking the product.

We source locally wherever possible and are committed to ongoing relationship with local community.

* We never use or add sweeteners such as erythritol and stevia. These ingredients are in-organic (not natural) and can possibly harm one's health as well as hinder the health benefits of kombucha.

* We always package in glass for product safety and health. Real kombucha is never packaged in aluminium or plastic.

* Our kombucha is a wild slow ferment for 4 weeks. The result is a dry slight sour taste with a fermented sugar residue of 1.2g/100ml.

Should my Kombucha be stored in the refrigerator? Why?

Yes, Herbs of Life kombucha should be stored in the refrigerator.

Our kombucha is raw, real and ALIVE! The living bacteria and yeast require residual sugars to keep alive to benefit our health. Refrigeration keeps them alive so they won't die.

If HOL kombucha is in warm or hot temperatures the carbonation can build up very quickly and cause a bottle to fizz and create excess carbonation.

It is shelf stable in the fridge for ten months.

Why is Kombucha made with sugar?

Sugar is necessary to feed the yeast. Very little sugar remains in the final brew because it is mostly converted to healthy acids, probiotics & vitamins! 1.2g/100ml.

Authentic real kombucha is ALWAYS made with cane sugar. Watch out for brands using ingredients such as erythritol or stevia. The yeasts and bacteria do not have the correct food, and in turn will not ferment and produce the goodness komucha is known for.

Does Kombucha contain alcohol?

Kombucha contains trace amounts of alcohol, around the same as an unpasturized fruit juice. Ours sits at 0.5% Alcohol.

Kombucha fermentation is lactic acid fermentation not an alcoholic fermentation. The sole objective of kombucha ferment is to produce lactic acid and probiotics not ethanol - unlike beer, wine, or cider.

The only input that can vary ethanol is the initial sugar input, and or the combination with other alcohol producing yeasts.

My Kombucha has pulp/pieces in it. Is this normal?

Yes, it is. This may be fruit pulp from our fresh ingredients or by products of the fermentation process - mini SCOBYs!

There are millions of living probiotic cultures inside every bottle. You may see them, which is a sign of good traditional natural fermentation. It is perfectly safe to consume, or you may strain and discard.

Do Herbs Of Life use all Organic Ingredients ?

Yes. We only use certified organic ingredients. We source our fruits, spices and vegetables from Aussie Organic Farms to support the industry and for optimal flavour and nutrition!We are certified with accredited certification body Aus-Qual.

Organic & Raw Sauerkraut FAQ

What is Sauerkraut?

Sauerkraut is fermented cabbage! It has a distinctive sour taste from the lactic acid formed from the bacteria, which consumes the sugar in the leaves during the fermentation process. It is simpy finely shredded cabbage and sea salt, left to ferment for three weeks! This produces a probiotic and nutrient dense side dish that has been eaten for centuries.

There is residue under the lid of my sauerkraut, is this normal?

Yes! We do all our fermenting IN JAR. Through this process the mixure bubbles and literally comes alive. Juices spill out from the lid and eventually form a seal. Due to the different cabbages (red & green) and different natural, whole ingredientds we use, the results may vary. Rest assured this is perfectly safe, and isn't mould.

Do I need to refrigerate Herbs of Life Sauerkraut?

Yes! Our kraut is 100% living! it is unpasturized unlike many supermarket brands and the bacteria is very much alive and thriving.

My jar fizzed upon opening! Is this normal?

Yes! Due to our fermentation techniques, all the live bacteria and subsequent gasses remain in the jar through the whole proces. This forms a seal. Sometimes, on opning you may get a "pop" or some fizzing. This is normal.

Do you use Starter Cultures?

No, we don't! We use WIld Fermentation techniques only, the cabbage contains all it needs to ferment correctly! in doing this our kraut remains crunchy, sour & delicious - without the additives!
